Acid Protease is made from Aspergillus niger through cultivation and extraction technique. 1 unit (U)

of Acid Protease equals to the amount of enzyme, which oxidised 1.0 μmol

beta D-glucose to D-glucose acid and H2O2 in 1 min at 30°C and pH6.0
